Finger Lickin’ Chicken ‘n’ Biscuits

Yes, you really will lick your fingers!

This is goo-ood home cookin’! So good, you have to say it with two syllables! Goo-ood! Ok, enough of that LOL. Let’s get to the recipe! Today we are making some chicken and biscuits. Which, as I like to think of it, is a country take on chicken and dumplings. It’s not really a soup, it’s kind of a grown-up biscuits and gravy you can eat for dinner! It’s filling, warm, hearty, no-frills, comfort food, served with flaky buttery from-scratch biscuits. You will slap your grandma it’s so good! Ok, don’t go slap your grandma. We respect our elders. Ingredients:

  • 1 onion
  • 2 carrots
  • 2 celery stalks
  • 3 slices of bacon
  • 2 large chicken breasts, cubed
  • 3 Tbsp. butter
  • 1 Tbsp. fresh thyme
  • 1 Tbsp. fresh chives
  • sage according to preference
  • 1/2 cup flour
  • 2 cups chicken stock
  • 1 cup heavy cream
  • 1 cup milk

Directions:

  • Chop the veggies into tiny pieces. Some call this diced, I say, small enough to cook evenly. Whatever.
  • Rough cut your bacon into smaller pieces and put in the bottom of a large pot. Sizzle until crispy.
  • Pull the bacon out and reserve for later. Keep the grease in the pot.
  • Add the chicken to the bacon grease and cook through.
  • Once the chicken is cooked, remove and reserve in a bowl set aside.
  • Add butter to the pot and add your chopped vegetables. Cook until soft/translucent.
  • Add your fresh herbs, thyme, sage, and chives, and stir.
  • Add the bacon back in and stir.
  • Add 1/2 cup flour. Stir around and allow the flour to cook for 2-3 minutes. Very important step to cook the flour!
  • Pour in chicken stock a cup at a time to allow it to incorporate well. It will start to turn pasty. Allow it to return to a boil.
  • Add the milk and heavy cream to the pot and stir.
  • Shred up the chicken and add to the gravy in the pot.
